Ingredients (Serves 2)

  • 3 green asparagus stalks (about 48g), peeled and trimmed
  • 2 leaves leaf lettuce (about 40g), torn into pieces
  • 1/2 tomato (about 83g), cut into wedges
  • 2 slices bacon (about 40g), cut into strips

  • Kewpie 1000 Island Dressing, to taste

Instructions

  1. Peel the bottom half of each asparagus spear with a peeler. Place in a microwave-safe dish, cover with plastic wrap, and microwave at 600W for about 2 minutes 30 seconds. Transfer to cold water and drain well.
  2. Soak the lettuce in cold water, drain thoroughly, and tear into bite-sized pieces.
  3. Cut the tomato into wedges.
  4. Cut bacon into short strips. Microwave in a heat-safe dish covered with plastic wrap for about 50 seconds at 600W.
  5. Arrange asparagus, lettuce, tomato, and bacon on a plate. Drizzle with 1000 Island dressing and serve.

Tips
