Carrot and Chicken Namul with Sesame Garlic Dressing

Ingredients (Serves 4)

Instructions

  1. Peel carrots and cut into 5 cm lengths. Slice into 3 mm planks, then julienne into 3 mm strips. Place in a microwave-safe bowl, sprinkle with 1 tablespoon water (not included in ingredients), cover with plastic wrap, and microwave at 600W for about 2 minutes 30 seconds. Drain well.
  2. Shred the cooked chicken into bite-sized pieces.
  3. Combine carrots and chicken in a bowl and toss with sesame garlic dressing. Chill before serving if making ahead.
