Chicken, Beans, Grains, and Orange Power Salad

Ingredients (Serves 1)

  • 3 small broccoli florets (45g)
  • 1 leaf leaf lettuce, torn (20g)
  • Carrot, peeled and julienned (amount as desired)
  • 1/2 orange, peeled and segmented (60g)
  • 70g ready-to-eat chicken breast (salad chicken), sliced into 8mm rounds
  • Salt, to taste
  • 1 packet (40g) 10-ingredient bean and grain mix

  • Kewpie Carrot Dressing, to taste

Instructions

  1. Boil the broccoli florets in salted water until just tender. Drain well.
  2. Rinse the leaf lettuce in cold water, drain, and tear into bite-size pieces.
  3. Peel and julienne the carrot. Peel the orange and remove the membranes to segment. Slice the salad chicken into 8mm thick pieces.
  4. Place the lettuce on a serving plate. Top with broccoli, carrots, orange, chicken slices, and the mixed beans and grains. Drizzle with Kewpie Carrot Dressing before serving.
