Egg Toast and Warm Vegetable Breakfast Plate

Ingredients (Serves 2)

  • 1 slice sandwich bread (cut from a 6-slice loaf)
  • 1 potato (about 110g)
  • 1/2 pack baby salad greens (about 25g)
  • 4 small cherry tomatoes (about 36g)
  • 2 small broccoli florets (about 30g)
  • 1 kiwi fruit (about 85g), halved
  • 2 medium boiled eggs (about 100g), sliced
  • 4 sausages (about 80g)

  • Kewpie Caesar Salad Dressing – to taste

  • Kewpie Coarse Ground Mustard – to taste

Instructions

  1. Toast the bread and sausages in an oven toaster. Cut the toast in half and top with sliced boiled egg.
  2. Microwave the potato with skin, wrapped in damp paper towel and loosely covered with plastic wrap, at 600W for about 3 minutes. Peel and cut into bite-sized pieces once slightly cooled.
  3. Separate the broccoli into florets, wrap in damp paper towel, microwave in a heatproof bowl covered with plastic wrap at 600W for about 50 seconds. Cool in water and drain.
  4. Plate the toast, sausages, potatoes, broccoli, baby greens, and quartered cherry tomatoes. Drizzle with Kewpie Caesar Salad Dressing and serve with halved kiwi fruit and a side of Kewpie Coarse Ground Mustard.
