Ingredients (Serves 2)

  • 4 slices sandwich bread (thin sliced, 8-slice loaf)
  • 1 potato (about 110g)
  • 1/2 tomato (about 83g), thinly sliced
  • 1 green bell pepper (about 34g), thinly sliced into rings
  • 1 lettuce leaf (about 29g), torn into pieces
  • Salt, to taste
  • Black pepper, to taste
  • 4 tablespoons Kewpie 1000 Island Dressing

Instructions

  1. Wash the potato and wrap it wet in a dry paper towel, then wrap it loosely with plastic wrap. Microwave at 600W for about 3 minutes. Peel and mash while hot. Mix with 3 tablespoons of 1000 Island dressing and season with salt and pepper.
  2. Slice the tomato and bell pepper thinly.
  3. Soak the lettuce in cold water, then drain well and tear into bite-sized pieces.
  4. Assemble the sandwich by layering the mashed potato mixture, sliced vegetables, and lettuce on the bread. Drizzle the remaining dressing on top, then close with another slice of bread.

Tips

  • Adjust microwave time as needed depending on your appliance.
