Roast Beef Wreath Salad

Ingredients (Serves 2)

  • 1/2 pack baby salad greens (about 25g)
  • 6 small broccoli florets (about 90g)
  • 1/3 cucumber (about 33g), shaved into ribbons
  • 2 medium red cherry tomatoes (about 36g), halved
  • 2 medium yellow cherry tomatoes (about 27g), halved
  • 60g sliced roast beef
  • Pinch of salt

  • Kewpie Caesar Salad Dressing – to taste

Instructions

  1. Separate the broccoli into small florets and boil in salted water until tender. Drain well.
  2. Use a vegetable peeler to shave the cucumber into ribbons. Roll each ribbon from one end to form a spiral. Halve the red and yellow cherry tomatoes.
  3. Arrange the baby greens in a wreath shape on a serving plate. Add roast beef slices, broccoli, cucumber spirals, and tomato halves. Drizzle with Kewpie Caesar Salad Dressing.
