Sesame Dan Dan Udon with Meat Miso

Ingredients (Serves 2)

  • 2 servings fresh or boiled udon noodles (about 440g)
  • 1 head bok choy (about 85g), quartered lengthwise
  • 10cm piece of long green onion (about 20g), shredded and soaked in water
  • 1/4 teaspoon chili oil (ra-yu), or to taste
  • 4 tablespoons Kewpie Deep-fried Sesame Dressing

Meat Miso

  • 150g ground pork
  • 1/2 teaspoon grated garlic
  • 1/2 tablespoon mixed miso
  • 1 teaspoon soy sauce
  • 1 teaspoon sake
  • 1 teaspoon sesame oil

Instructions

  1. In a microwave-safe bowl, combine all meat miso ingredients. Microwave uncovered (600W) for 1 minute 30 seconds. Stir, then heat for another 1 minute 30 seconds and mix well.
  2. Blanch bok choy in boiling water, cool in water, and squeeze out moisture. Shred the green onion and soak in water, then drain.
  3. Cook the udon according to package directions and drain well.
  4. Top udon with meat miso and vegetables. Drizzle with deep-fried sesame dressing and chili oil.

Tips

  • Adjust chili oil for spiciness to taste. Add a splash of vinegar for a tangy twist.
