Blanch bok choy in boiling water, cool in water, and squeeze out moisture. Shred the green onion and soak in water, then drain.
Cook the udon according to package directions and drain well.
Top udon with meat miso and vegetables. Drizzle with deep-fried sesame dressing and chili oil.
