Smoked Salmon and Potato Salad with 1000 Island Dressing

A light and elegant salad featuring smoked salmon, tender potato slices, baby greens, and red onion, topped with sweet-savory Kewpie 1000 Island Dressing.

  1. Kewpie 1000 Island Dressing

Ingredients (Serves 2)

  • 1 potato (about 110g), peeled and sliced into rounds
  • 1/4 pack baby leaf greens (about 13g)
  • 1/8 red onion (about 18g), thinly sliced and soaked in water
  • 4 slices smoked salmon (about 60g), halved in length

  • Kewpie 1000 Island Dressing, to taste

Instructions

  1. Wash the potato and wrap it wet in a dry paper towel, then loosely wrap with plastic wrap. Microwave at 600W for about 2 minutes 30 seconds. Peel and slice into rounds.
  2. Thinly slice red onion and soak in water to reduce sharpness. Drain well.
  3. Cut smoked salmon slices in half lengthwise.
  4. On a plate, alternate layers of sliced potato and smoked salmon. Pile the baby greens and red onion in the center. Drizzle with 1000 Island dressing and serve.
