Spicy Sesame Bang Bang Chicken

Instructions

  1. Smash the cucumbers with a rolling pin and tear into bite-sized chunks by hand.
  2. Place chicken in a microwave-safe bowl. Poke several holes with a fork, sprinkle with sake, and rub with sugar and salt. Cover loosely with plastic wrap and microwave (600W) for 4 minutes. Let it cool slightly while covered, then shred into pieces by hand.
  3. Arrange cucumber and chicken on a plate. Top with chopped green onions and drizzle with Kewpie Deep-fried Sesame with Spicy Chili Oil Dressing.

Tips

  • Smashing cucumbers brings out their crunch and helps them absorb more flavor.
  • Let the chicken rest covered after cooking to retain moisture before shredding.
