Spinach & Mushroom Salad with Parmesan

Ingredients (Serves 2)

Instructions

  1. Cut the spinach into bite-sized lengths. Soak the leaf lettuce in cold water, then drain and tear into smaller pieces.
  2. Remove the stem from the mushroom and slice thinly.
  3. Arrange the spinach and lettuce on a plate. Top with mushrooms, sprinkle with grated parmesan, and drizzle with dressing.
