Spring Onion, Cucumber, and Chicken Salad

Ingredients (Serves 2)

  • 1 chicken breast (about 180g)
  • 1 spring onion (about 190g), thinly sliced
  • 1 cucumber (about 98g), halved lengthwise and sliced thin on a diagonal
  • Pinch of salt
  • 1 tablespoon sake

  • Kewpie Grated Onion Dressing – to taste

Instructions

  1. Place the chicken breast in a microwave-safe container. Sprinkle with salt, sake, and 1 tablespoon of water (not listed). Cover loosely with plastic wrap and microwave at 600W for 1 minute 30 seconds. Flip and heat for another 1 minute 30 seconds. Let cool, then shred finely.
  2. Thinly slice the spring onion. Slice the cucumber lengthwise and then diagonally. Combine both in a bowl and arrange on a plate.
  3. Top the vegetables with the shredded chicken and drizzle with Kewpie Grated Onion Dressing.

Tips

  • Adjust microwave time depending on the size and thickness of the chicken.
  • Loosely covering the chicken with wrap prevents splattering and uneven cooking.
