Steamed Chicken, Bean, and Avocado Power Salad

Ingredients (Serves 1)

  • 2 small cherry tomatoes, halved (18g)
  • 1/2 pack baby leaf greens (13g)
  • 1/4 avocado, sliced into 8mm thick rounds (35g)
  • 1/2 chicken breast (90g)
  • Salt and pepper, to taste
  • 1 teaspoon sake
  • 1 packet (50g) mixed beans (e.g., chickpeas, green peas, kidney beans)

  • Kewpie Carrot Dressing, to taste

Instructions

  1. Place the chicken breast in a microwave-safe dish. Season with salt, pepper, and sake. Cover loosely with plastic wrap and microwave at 600W for about 2 minutes 30 seconds. Let cool, then shred into bite-sized pieces.
  2. Halve the cherry tomatoes. Slice the avocado into 8mm rounds.
  3. Layer baby greens on a serving plate, then top with chicken, tomatoes, avocado, and mixed beans. Drizzle with Kewpie Carrot Dressing.

  • To prepare avocado, cut around the pit lengthwise, twist to separate, remove the seed, and peel before slicing.
