Tomato, Cucumber, and Shrimp Salad

Ingredients (Serves 2)

  • 1/2 tomato, diced into 1cm cubes (83g)
  • 1/2 cucumber, diced into 1cm cubes (49g)
  • 1/4 yellow bell pepper, diced into 1cm cubes (40g)
  • 1/8 onion, finely chopped and soaked in water (24g)
  • 6 small shrimp, peeled, deveined, boiled, and diced into 1cm cubes (84g)
  • 3 tablespoons Kewpie Carrot Dressing

Instructions

  1. Dice the tomato, cucumber, and yellow bell pepper into 1cm cubes. Finely chop the onion, soak in water, then drain well.
  2. Peel and devein the shrimp. Boil them briefly, drain, and cut into 1cm pieces.
  3. Combine all ingredients in a bowl and toss with Kewpie Carrot Dressing.
