Tomato, Cucumber, and Shrimp Salad
Ingredients (Serves 2)
- 1/2 tomato, diced into 1cm cubes (83g)
- 1/2 cucumber, diced into 1cm cubes (49g)
- 1/4 yellow bell pepper, diced into 1cm cubes (40g)
- 1/8 onion, finely chopped and soaked in water (24g)
- 6 small shrimp, peeled, deveined, boiled, and diced into 1cm cubes (84g)
- 3 tablespoons Kewpie Carrot Dressing
Instructions
- Dice the tomato, cucumber, and yellow bell pepper into 1cm cubes. Finely chop the onion, soak in water, then drain well.
- Peel and devein the shrimp. Boil them briefly, drain, and cut into 1cm pieces.
- Combine all ingredients in a bowl and toss with Kewpie Carrot Dressing.
