Apple, Boiled Egg, and Bean Power Salad

Ingredients (Serves 2)

  • 1/2 bag mixed salad greens with lettuce and bell pepper (e.g., Salad Club 10-ingredient mix, 80g)
  • 1/6 apple, peeled and cut into bite-size wedges (36g)
  • 2 boiled eggs, quartered (100g)
  • 10 cashews, roughly chopped or whole (16g)
  • 1 packet (50g) mixed beans (e.g., chickpeas, green peas, kidney beans)

  • Kewpie Mayonnaise, to taste

  • Kewpie Carrot Dressing, to taste

Instructions

  1. Peel and cut the apple into bite-size wedges. Cut each boiled egg into four wedges.
  2. Place the mixed salad greens, apple, egg, and mixed beans on a serving plate. Sprinkle cashews over the top.
  3. Drizzle Kewpie Mayonnaise in a zigzag pattern, then finish with Kewpie Carrot Dressing just before serving.

Preparation Tips

  • Adding the dressing last enhances the aroma and flavor.
  • If the beans or cashews feel too firm, pre-mix them with the dressing or mayo and let them sit for a few minutes before serving.
