Asian-Style Chicken Salad

This Asian-inspired chicken salad combines tender breast meat, fresh vegetables, and cilantro, finished with spicy sesame Kewpie Chinese Dressing.

  1. Kewpie Chinese Dressing

Ingredients (Serves 2)

  • 1/2 skinless chicken breast (about 75g)
  • 3 cherry tomatoes (27g), halved
  • 1/2 cucumber (49g), julienned
  • 1/4 red onion (35g), thinly sliced
  • Fresh cilantro, cut into 3cm lengths
  • Sake, a splash
  • Salt and pepper, to taste

  • Kewpie Chinese Dressing, to taste

Instructions

  1. Place the chicken breast in a microwave-safe dish. Season with sake, salt, and pepper. Cover with plastic wrap and microwave (600W) for about 2 minutes 30 seconds. Let it cool, then slice into bite-size pieces.
  2. Prepare the vegetables: halve the cherry tomatoes, julienne the cucumber, slice the red onion thinly, and cut the cilantro into short pieces.
  3. Arrange the chicken and vegetables on a serving plate. Drizzle with Chinese dressing before serving.

Tips

  • Adjust microwave time as needed depending on your appliance’s wattage.
