Broccoli and Pumpkin Salad with Tuna and Cheese

A colorful and hearty salad of pumpkin, broccoli, tuna, cherry tomatoes, and cheese, tossed in creamy Kewpie 1000 Island Dressing. Great for kids too.

  1. Kewpie 1000 Island Dressing

Ingredients (Serves 2)

  • 80g pumpkin, cut into 1.5 cm cubes
  • 1/3 head broccoli (about 75g), divided into small florets
  • 3 small cherry tomatoes (about 27g), quartered
  • 30g processed cheese, cut into 1 cm cubes
  • 1/2 can tuna (about 35g), drained
  • 2 tablespoons Kewpie 1000 Island Dressing

Instructions

  1. Remove seeds and pulp from the pumpkin, rinse lightly, and wrap it wet in a paper towel. Cover with plastic wrap and microwave at 600W for about 1 minute 30 seconds. Let cool slightly, then cut into 1.5 cm cubes.
  2. Divide broccoli into small florets. Wrap in a damp paper towel, place in a microwave-safe container, cover loosely with plastic wrap, and microwave at 600W for about 1 minute 30 seconds. Transfer to cold water, then drain.
  3. Quarter the cherry tomatoes. Cut cheese into 1 cm cubes.
  4. In a bowl, combine pumpkin, broccoli, tomatoes, cheese, and drained tuna. Toss with 1000 Island dressing.

Tips

  • Adjust microwave times based on your appliance. Let ingredients cool slightly for best texture before mixing.
