Ingredients (Serves 2)

  • 1 tomato (about 170g), cut into 6 wedges, then halved
  • 6 broccoli florets (about 90g)
  • 3 leaves leaf lettuce (about 60g), torn into pieces
  • 2 leaves iceberg lettuce (about 58g), torn into pieces
  • 1 chicken breast (about 180g)
  • 2 tsp sake (or cooking wine)
  • 1/4 tsp salt + a pinch
  • A pinch of sugar

  • Kewpie Deep Roasted Sesame Dressing, Half Calories (to taste)

Instructions

  1. Cut the tomato into 6 wedges, then slice each in half horizontally.
  2. Separate broccoli into florets and blanch in salted boiling water. Drain well.
  3. Soak both types of lettuce in cold water to refresh. Drain and tear into bite-sized pieces.
  4. Place chicken breast in a microwave-safe container. Prick with a fork, add sake, and rub in the sugar and 1/4 tsp salt. Cover loosely with plastic wrap and microwave at 600W for about 4 minutes. Let cool slightly with the wrap on, then slice into 5mm pieces.
  5. Layer the lettuce mix on a serving plate. Top with tomato, broccoli, and chicken. Drizzle with sesame dressing and serve.

Tips

  • Microwave time may vary depending on thickness of the chicken—adjust as needed.
