Carrot and Almond Salad
Light salad of shaved carrot, onion, and almonds, enhanced with the sweetness and tang of Kewpie Carrot Dressing.
Ingredients (Serves 2)
- 1/2 carrot, peeled and shaved into ribbons (90g)
- 1/6 onion, thinly sliced and soaked in water (31g)
- 5 almonds, roughly chopped (7g)
- Pinch of salt
Kewpie Carrot Dressing, to taste
Instructions
- Use a peeler to shave the carrot into ribbons. Sprinkle with salt and let sit until softened. Squeeze out excess moisture.
- Thinly slice the onion, soak in water, and drain well.
- Arrange the carrot and onion on a plate. Sprinkle with chopped almonds and drizzle with Kewpie Carrot Dressing.
