Chopped Salad with Colorful Vegetables

Ingredients (Serves 2)

  • 1 cucumber, diced into 1cm cubes (98g)
  • 1/2 yellow bell pepper, diced (80g)
  • 2 lettuce leaves, rinsed and diced into 1cm squares (58g)
  • 6 cherry tomatoes, cut into eighths (54g)
  • 1/2 piece salad chicken, diced into 1cm cubes (90g)
  • 1 hard-boiled egg, diced into 1cm cubes (51g)
  • 1 packet (50g) mixed beans (e.g., chickpeas, green peas, kidney beans)
  • Peanuts, roughly chopped, to taste

  • Kewpie Carrot Dressing, to taste

Instructions

  1. Dice the cucumber, yellow bell pepper, salad chicken, and boiled egg into 1cm cubes. Soak and drain the lettuce, then dice to 1cm squares. Cut cherry tomatoes into eighths.
  2. Roughly chop the peanuts.
  3. Combine all ingredients in a bowl with the mixed beans. Toss with Kewpie Carrot Dressing just before serving.
