Colorful Spinach Salad with Peanuts

A bright and refreshing salad of boiled spinach, yellow pepper, and ham, finished with crushed peanuts and Kewpie Coleslaw Dressing.

  1. Kewpie Coleslaw Dressing

Ingredients (Serves 2)

  • 1 bunch spinach (about 250g)
  • 1/4 yellow bell pepper (about 40g), thinly sliced
  • 2 slices ham (about 30g), halved and cut into strips
  • Crushed peanuts, to garnish
  • Salt, to taste
  • 3 tablespoons Kewpie Coleslaw Dressing

Instructions

  1. Boil spinach in salted water, then transfer to cold water. Squeeze out excess moisture and cut into bite-sized lengths.
  2. Thinly slice yellow bell pepper and cut into shorter strips. Slice the ham into strips.
  3. Toss the spinach, bell pepper, and ham with 2 tablespoons of coleslaw dressing.
  4. Plate the salad, drizzle with the remaining 1 tablespoon of dressing, and sprinkle with crushed peanuts.

Tips

  • Be sure to thoroughly squeeze the spinach to avoid watering down the dressing.
