Colorful Vegetable Stick Marinade

Ingredients (Serves 4)

  • 1 cucumber (98g), cut into 6 sticks per third length
  • 50g daikon, peeled and cut into 5cm x 5mm sticks
  • 1/4 carrot (45g), peeled and cut into 5cm x 5mm sticks
  • 1/4 red bell pepper (40g), sliced into 1cm strips and halved
  • Salt, a pinch
  • 5 tablespoons Kewpie Lemon Dressing

Instructions

  1. Prepare vegetables into uniform stick shapes: cucumber into long strips, daikon and carrot into 5cm sticks, and bell pepper into short strips.
  2. Sprinkle salt over the vegetables and let sit for about 10 minutes. Drain any excess moisture.
  3. Place the vegetables in a clean airtight container or food-safe bag. Add Kewpie Lemon Dressing until they are submerged. Refrigerate and marinate before serving.
