Cucumber and Steamed Chicken Salad with Sesame Yuzu Dressing

Instructions

  1. Place chicken breast in a microwave-safe dish. Season with sake, salt, and pepper. Cover with plastic wrap and microwave for about 2 minutes 30 seconds (600W). Let cool, then slice diagonally.
  2. Cut cucumber into thin diagonal slices, then julienne.
  3. Shred the scallion into fine strips (shiraganegi) and soak in water. Drain well.
  4. Layer cucumber and chicken on a serving plate. Top with shredded scallion and drizzle with sesame yuzu dressing.
