Cucumber, Bean Sprout, and Crab Stick Salad

A refreshing and easy Chinese-style salad made with cucumber, bean sprouts, and imitation crab, tossed in Kewpie Chinese Dressing and finished with sesame.

  1. Kewpie Chinese Dressing

Ingredients (Serves 2)

  • 1/2 bag bean sprouts (about 130g)
  • 1 cucumber (about 98g), thinly julienned
  • 4 imitation crab sticks (about 44g), shredded
  • White sesame seeds, to taste
  • 3 tablespoons Kewpie Chinese Dressing

Instructions

  1. Rinse the bean sprouts and place them, still wet, into a microwave-safe container. Cover loosely with plastic wrap and microwave at 600W for about 2 minutes. Let cool, then squeeze out excess moisture thoroughly.
  2. Thinly slice the cucumber diagonally, then julienne. Shred the imitation crab into bite-sized strips.
  3. Combine the bean sprouts, cucumber, and crab in a bowl. Toss with Kewpie Chinese Dressing until well coated.
  4. Serve on a plate and sprinkle with sesame seeds.

Tips

  • Squeeze the bean sprouts thoroughly after heating to avoid a watery salad.
