This easy foil-baked dish pairs tender mackerel with sweet onion and carrot, all enhanced by the herb and spice notes of Kewpie Italian Dressing. Using foil locks in moisture for a perfectly cooked result.

Ingredients (Serves 2)

  • 2 fillets mackerel (approx. 160g total)
  • 1/2 onion (94g), cut into wedges and halved
  • 1/4 carrot (45g), cut into half-moons
  • Salt, to taste

  • Kewpie Italian Dressing, to serve

Instructions

  1. Lightly salt the mackerel fillets. Once moisture rises to the surface, pat them dry.
  2. Cut the onion and carrot as described.
  3. Place each portion of mackerel and vegetables on a double layer of aluminum foil and wrap securely.
  4. Bake in a toaster oven for about 15 minutes. Serve with Italian dressing on the side.
