Grilled Chicken and Cherry Tomato Paysanne Salad

A hearty paysanne salad with grilled chicken, potatoes, mixed beans, and cherry tomatoes, dressed in herb-rich Kewpie Paysanne Dressing.

  1. Kewpie Paysanne Salad Dressing

Ingredients (Serves 2)

  • 1/2 onion (about 94g), cut into 7mm rings
  • 1 small potato (about 90g)
  • 2 leaves leaf lettuce (about 48g)
  • 3 cherry tomatoes (about 27g)
  • 1 chicken breast (about 140g)
  • Salad oil, as needed
  • 1 pack Salad Club Mixed Beans (chickpeas, green peas, red kidney beans, 50g)

  • Kewpie Paysanne Salad Dressing, to taste

Instructions

  1. Cut the onion into 7mm thick rings.
  2. Wash the potato thoroughly, cut into chunks with the skin on, wrap in a dry paper towel and loosely in plastic wrap. Microwave (600W) for about 3 minutes.
  3. Rinse lettuce in cold water, drain, and tear into bite-sized pieces.
  4. Halve the cherry tomatoes.
  5. Heat oil in a frying pan and cook the onion rings and chicken breast until browned and cooked through. Slice the chicken into 7mm slices.
  6. Arrange lettuce on a plate, top with potato, tomatoes, grilled onion and chicken, and mixed beans. Drizzle generously with Kewpie Paysanne Dressing.
