Jack-o'-Lantern Tomato Cup Salad

Hollowed tomatoes become jack-o'-lantern salad cups filled with corn, edamame, and cheese, topped with Kewpie Creamy Vegetable Dressing.

  1. Kewpie Creamy Vegetable Dressing

Ingredients (Serves 2)

  • Tomatoes – 2 medium (330g), tops sliced and insides scooped
  • Frozen edamame – 10 pods (14g), shelled
  • Sliced cheese – 1 slice (18g), cut into jack-o'-lantern face shapes and diced
  • Whole kernel corn – 2 tablespoons

  • Kewpie Creamy Vegetable Dressing (Carrot & Onion) – 2 tablespoons

Instructions

  1. Cut off the top quarter of each tomato and scoop out the insides. Dice the scooped tomato flesh into 1 cm cubes after draining the juice.
  2. Thaw the edamame according to package instructions and shell.
  3. Cut jack-o'-lantern eyes and mouths out of the cheese slice. Dice the remaining cheese.
  4. In a bowl, mix the diced tomato, edamame, diced cheese, and corn with dressing.
  5. Spoon the mixture into the hollowed tomatoes. Attach cheese face shapes to the outside to complete the jack-o'-lantern look.
