Jumbo Lotus Root Meat Patties

Pan-fried lotus root patties filled with seasoned ground chicken and tofu, served with Kewpie Chinese Dressing. Crisp, juicy, and full of umami.

  1. Kewpie Chinese Dressing

Ingredients (Serves 4)

  • 400g ground chicken
  • 1 lotus root (about 120g), peeled and thinly sliced
  • 1/2 stalk long green onion (about 30g), thinly sliced
  • 1/2 egg (M size, about 26g), beaten
  • 1/2 block firm tofu (about 180g), drained and crumbled
  • Potato starch, as needed
  • Vinegar, for soaking lotus root
  • Salt and pepper, to taste
  • Sesame oil, for cooking
  • 3 tablespoons Kewpie Chinese Dressing (1 tbsp in filling, 2 tbsp for dipping)

Instructions

  1. In a bowl, mix the ground chicken with salt and pepper until sticky.
  2. Peel and thinly slice the lotus root. Soak in vinegar water to prevent discoloration, then drain.
  3. Thinly slice the green onion. Drain and crumble the tofu.
  4. Add the green onion, tofu, beaten egg, and 1 tablespoon of dressing to the meat mixture and combine thoroughly.
  5. Grease a frying pan with sesame oil using paper. Layer half the lotus root slices, dust with potato starch, spread the meat mixture into a round shape, dust again, then top with remaining lotus root slices and press lightly.
  6. Cook over medium heat for about 5 minutes. Flip, cover with a lid, and cook another 5 minutes until golden and cooked through.
  7. Cut into 8 pieces and serve with the remaining dressing on the side as a dipping sauce.

Tips

  • Microwave tofu wrapped in paper towel for 1 minute 40 seconds at 600W to remove excess moisture.
  • Dusting lotus root with starch helps it adhere securely to the meat filling.
