Leaf Lettuce and Tomato Salad

Ingredients (Serves 2)

  • 1/2 cucumber (49g)
  • 2 leaves of leaf lettuce (40g)
  • 1/4 yellow bell pepper (40g)
  • 3 medium cherry tomatoes (36g)

  • Kewpie Carrot Dressing, to taste

Instructions

  1. Slice the cucumber in half lengthwise, then cut into thin diagonal slices.
  2. Rinse the leaf lettuce in cold water, drain well, and tear into bite-size pieces.
  3. Cut the yellow bell pepper in half lengthwise, then thinly slice it vertically. Halve the cherry tomatoes.
  4. Arrange all vegetables on a plate and drizzle with Kewpie Carrot Dressing just before serving.
