This nutritious salad combines creamy microwave-cooked pumpkin with crisp frill lettuce, juicy tomato, and crunchy radish and yellow pepper. Tossed with mixed beans and grains and dressed in Kewpie Separated French Dressing, it’s a satisfying blend of textures and flavors in one bowl.

Ingredients (Serves 2)

  • ½ tomato (approx. 83g), cut into wedges
  • 80g kabocha pumpkin, seeded and sliced
  • 3 frill lettuce leaves (approx. 60g), torn into bite‑size pieces
  • ¼ yellow bell pepper (approx. 40g), thinly sliced
  • 1 radish (approx. 10g), thinly sliced
  • 1 bag Salad Club 10‑Item Mix (beans & grains, approx. 40g)

  • Kewpie Separated French Dressing, to taste

Instructions

  1. Rinse frill lettuce in cold water and tear into pieces. Thinly slice radish and yellow pepper. Cut tomato into wedges.
  2. Peel seeds from kabocha and cut into 5 mm slices. Wrap in damp paper towel, microwave covered at 600 W for about 2 ½ minutes until tender.
  3. Arrange lettuce, tomato, radish, yellow pepper, pumpkin, and bean‑grain mix on a plate. Drizzle with Kewpie Separated French Dressing before serving.
