Ingredients (Serves 2)

  • 2 potatoes (approx. 220g)
  • 1/4 onion (approx. 47g), thinly sliced
  • 1/4 carrot (approx. 45g), peeled and sliced into half-moons
  • 1/4 cucumber (approx. 25g), thinly sliced
  • 2 slices ham (approx. 30g), cut into strips
  • Salt and pepper, to taste
  • 2 tablespoons Kewpie Separated French Dressing
  • 5 tablespoons Kewpie Mayonnaise

Instructions

  1. Wash the potatoes and, while still damp, wrap in dry paper towel, then loosely in plastic wrap. Microwave at 600W for about 5 minutes 30 seconds. Peel and mash while hot, then mix in the dressing to season.
  2. Place the sliced onion and carrot in a heatproof dish, cover with plastic wrap, and microwave at 600W for about 1 minute 30 seconds.
  3. Slice the cucumber into rounds and cut the ham into short strips.
  4. Add the onion, carrot, cucumber, and ham to the potatoes. Mix in the mayonnaise and adjust flavor with salt and pepper.
