  1. Kewpie 1000 Island Dressing

Ingredients (Serves 2)

  • 80g small cooked shrimp, peeled and deveined
  • 2 eggs (about 100g), beaten
  • 2 leaves leaf lettuce (about 58g), torn into bite-sized pieces
  • 1/2 cucumber (about 49g), sliced into rounds
  • Salt, to taste
  • Black pepper, to taste
  • Salad oil, as needed

  • Kewpie 1000 Island Dressing, to taste

Instructions

  1. Peel and devein the shrimp if not already done.
  2. Heat salad oil in a pan. Add shrimp and lightly season with salt and pepper. Pour in the beaten eggs and stir-fry just until set for a fluffy texture.
  3. Soak the lettuce in cold water, then drain well. Slice the cucumber into rounds.
  4. Arrange lettuce and cucumber in a bowl or plate, top with the shrimp and egg mixture, and drizzle with 1000 Island dressing.

  • To keep eggs fluffy, avoid overcooking—lightly scramble over medium heat.
