Simple Nicoise-Style Salad

Ingredients (Serves 2)

  • 1 small tomato (about 150g)
  • 1 potato (about 110g)
  • 1 pack baby leaf greens (about 50g)
  • 1 pouch (50g) light tuna flakes
  • 1 pouch (80g) sliced black olives

  • Kewpie Olive Oil & Onion Dressing (to taste)

Instructions

  1. Cut the tomato into six wedges, then halve each wedge crosswise.
  2. Peel the potato and cut into 1cm thick half-moons. Soak briefly in water, then drain. Place in a microwave-safe dish, cover loosely with plastic wrap, and microwave at 600W for about 2 minutes. Adjust cooking time as needed.
  3. Spread baby greens on a plate. Arrange tomato, potato, and tuna on top. Scatter sliced black olives and finish with a drizzle of dressing.
