Smoked Salmon and Potato Salad with 1000 Island Dressing
A light and elegant salad featuring smoked salmon, tender potato slices, baby greens, and red onion, topped with sweet-savory Kewpie 1000 Island Dressing.
Ingredients (Serves 2)
- 1 potato (about 110g), peeled and sliced into rounds
- 1/4 pack baby leaf greens (about 13g)
- 1/8 red onion (about 18g), thinly sliced and soaked in water
- 4 slices smoked salmon (about 60g), halved in length
Kewpie 1000 Island Dressing, to taste
Instructions
- Wash the potato and wrap it wet in a dry paper towel, then loosely wrap with plastic wrap. Microwave at 600W for about 2 minutes 30 seconds. Peel and slice into rounds.
- Thinly slice red onion and soak in water to reduce sharpness. Drain well.
- Cut smoked salmon slices in half lengthwise.
- On a plate, alternate layers of sliced potato and smoked salmon. Pile the baby greens and red onion in the center. Drizzle with 1000 Island dressing and serve.
