Snap Pea Mimosa Salad

A colorful spring salad with snap peas, shredded carrot, sweet onion, and egg, dressed with Kewpie Carrot Dressing.

  1. Kewpie Carrot Dressing

Ingredients (Serves 2)

  • 2 lettuce leaves, rinsed and torn (58g)
  • 1/4 carrot, peeled and julienned (45g)
  • 8 snap peas, trimmed, boiled, halved lengthwise (40g)
  • 1/6 sweet onion, thinly sliced and soaked in water (31g)
  • 1 boiled egg, mashed with a fork (51g)
  • Salt, to taste

  • Kewpie Carrot Dressing, to taste

Instructions

  1. Rinse and tear the lettuce into bite-sized pieces.
  2. Julienne the carrot. Remove strings from the snap peas, boil in salted water, cool in water, and drain. Cut in half lengthwise.
  3. Thinly slice the sweet onion, soak in water, and drain well.
  4. Mash the boiled egg finely using a fork.
  5. Layer the lettuce on a plate, arrange the carrot, snap peas, and onion on top, then sprinkle with mashed egg. Drizzle with Kewpie Carrot Dressing before serving.
