Soft-Boiled Egg and Lentil Paysanne Salad

A satisfying paysanne salad with potato, lentils, chickpeas, ham, and soft-boiled egg, dressed in Kewpie Paysanne Salad Dressing.

  1. Kewpie Paysanne Salad Dressing

Ingredients (Serves 2)

  • 1 medium potato (about 110g)
  • 1/2 tomato (about 83g)
  • 2 leaves leaf lettuce (about 40g)
  • 2 slices of ham (about 30g)
  • 1 egg (about 51g)
  • 1 pack Salad Club Lentils & Chickpeas (50g)

  • Kewpie Paysanne Salad Dressing, to taste

Instructions

  1. Rinse lettuce in cold water, drain, and tear into bite-sized pieces.
  2. Wash the potato and microwave (600W) for about 3 minutes, wrapped damp in a paper towel and plastic wrap. Peel and cut into bite-sized pieces.
  3. Cut tomato into wedges, then halve each wedge. Cut ham slices in half.
  4. Boil an egg for about 8 minutes for a soft center. Cool in water, peel, and slice in half horizontally.
  5. On a plate, arrange the lettuce, then layer with potato, tomato, ham, and lentil-chickpea mix. Place the halved egg in the center and drizzle with Kewpie Paysanne Dressing.

  • Adjust microwave and boiling times as needed for your equipment and preference for egg doneness.
