Sweet Potato and Corn Chunky Salad

A chunky salad of sweet potato, corn, tomato, and ham tossed in Kewpie Creamy Vegetable Dressing. A simple, hearty side dish.

  1. Kewpie Creamy Vegetable Dressing

Ingredients (Serves 2)

  • Sweet potato – 1/2 (140g), unpeeled and cut into 1.5 cm cubes
  • Cherry tomatoes – 4 (36g), cut into wedges
  • Ham – 2 slices (30g), cut into 1.5 cm cubes
  • Whole kernel corn – 1 pack (50g)

  • Kewpie Creamy Vegetable Dressing (Carrot & Onion) – 3 tablespoons

Instructions

  1. Wash and cube the sweet potato (leave skin on). Soak briefly in water, then place still wet into a microwave-safe container. Cover loosely with plastic wrap and microwave at 600W for about 2 minutes 30 seconds. Let cool slightly.
  2. Quarter the cherry tomatoes and cut ham into 1.5 cm cubes.
  3. In a bowl, combine the sweet potato, tomato, ham, and corn. Toss with dressing and serve.
