Tomato & Avocado Salad with Olive Oil & Onion Dressing

Ingredients (Serves 2)

Instructions

  1. Cut the tomato into 8 wedges. Slice the avocado into 1cm thick pieces.
  2. Thinly slice the onion, soak in water, then drain well.
  3. Arrange tomato, avocado, and onion on a plate with the baby greens. Drizzle with dressing and serve.

Tip

  • To prep the avocado, cut around the seed lengthwise. Twist to separate halves, remove the pit, and peel the skin.
