Zucchini and Cucumber Veggie Noodle Salad

Ingredients (Serves 1)

  • 1/2 zucchini, spiralized and cut to 15cm lengths (100g)
  • 1/2 cucumber, spiralized and cut to 15cm lengths (49g)
  • 1/4 pack radish sprouts (kaiware), trimmed and halved (19g)
  • 1/2 can tuna, drained (35g)
  • 3 walnuts, crushed (9g)

  • Kewpie Carrot Dressing, to taste

Instructions

  1. Trim and spiralize the zucchini and cucumber using a veggie noodle cutter. Cut into 15cm lengths.
  2. Trim the root ends of the radish sprouts and cut in half.
  3. Place the veggie noodles and drained tuna on a plate. Top with radish sprouts and crushed walnuts. Drizzle with Kewpie Carrot Dressing before serving.

Preparation Tips

  • Depending on your veggie noodle cutter, you may need more vegetables than listed. Refer to your cutter’s manual for recommended quantities.
  • If you don't have a cutter, slice the vegetables into ribbons using a knife and peeler.
