Zucchini and Cucumber Veggie Noodle Salad
Ingredients (Serves 1)
- 1/2 zucchini, spiralized and cut to 15cm lengths (100g)
- 1/2 cucumber, spiralized and cut to 15cm lengths (49g)
- 1/4 pack radish sprouts (kaiware), trimmed and halved (19g)
- 1/2 can tuna, drained (35g)
- 3 walnuts, crushed (9g)
Kewpie Carrot Dressing, to taste
Instructions
- Trim and spiralize the zucchini and cucumber using a veggie noodle cutter. Cut into 15cm lengths.
- Trim the root ends of the radish sprouts and cut in half.
- Place the veggie noodles and drained tuna on a plate. Top with radish sprouts and crushed walnuts. Drizzle with Kewpie Carrot Dressing before serving.
Preparation Tips
- Depending on your veggie noodle cutter, you may need more vegetables than listed. Refer to your cutter’s manual for recommended quantities.
- If you don't have a cutter, slice the vegetables into ribbons using a knife and peeler.
