This tangy zucchini salad features thinly sliced zucchini, red bell pepper, and onion, all tossed in a mustard-infused dressing made with Kewpie Separated French Dressing and coarse-grain mustard. Marinated briefly and served chilled, it’s a refreshing and flavorful side dish.

Ingredients (Serves 2)

  • 1 zucchini (approx. 200g), halved lengthwise and thinly sliced
  • 1/2 red bell pepper (approx. 17g), diced into 2 cm pieces
  • 1/4 onion (approx. 47g), diced into 2 cm pieces

Instructions

  1. Slice the zucchini thinly after halving lengthwise using a slicer.
  2. Dice the red bell pepper and onion into 2 cm pieces, cover, and microwave at 600 W for about 50 seconds.
  3. Place zucchini, red pepper, onion, and marinade A in a food-safe plastic bag. Gently massage to coat and refrigerate for about 10 minutes.

Tip: Marinate to your desired taste—longer marination enhances flavor. Using a plastic bag helps distribute dressing evenly.
