Instructions

  1. Trim the base from the shimeji and enoki mushrooms and separate into small clusters. Remove stems from shiitake mushrooms and cut in halves.
  2. Blanch all mushrooms in boiling water, then drain thoroughly.
  3. Slice the chikuwa diagonally into bite-sized pieces.
  4. In a bowl, combine the cooked mushrooms and chikuwa. Toss with the dressing and let marinate to enhance flavor.

Tips

  • It can be served right after tossing with dressing, but marinating allows the flavors to develop further.
