Marinated Summer Vegetables Salad
Ingredients (Serves 2)
- 1 cucumber (98g)
- 6 cherry tomatoes (54g)
- 1/2 yellow bell pepper (80g)
- Kewpie Italian Dressing – to taste
Instructions
- Briefly blanch the cherry tomatoes in boiling water, then transfer to cold water and peel the skins.
- Peel the cucumber in stripes and slice into 1 cm rounds. Dice the yellow bell pepper.
- Place the cucumber and bell pepper in a microwave-safe bowl, cover with plastic wrap, and microwave (600W) for about 50 seconds.
- While the vegetables are still warm, combine with the peeled tomatoes and pour over the Kewpie Italian Dressing. Let marinate to blend the flavors.
Tips
- For enhanced flavor, chill the marinated vegetables in the refrigerator before serving.
