Marinated Summer Vegetables Salad

Summer marinated vegetables including cucumber, yellow bell pepper, and peeled cherry tomatoes in a light dressing

Ingredients (Serves 2)

  • 1 cucumber (98g)
  • 6 cherry tomatoes (54g)
  • 1/2 yellow bell pepper (80g)
  • Kewpie Italian Dressing – to taste

Instructions

  1. Briefly blanch the cherry tomatoes in boiling water, then transfer to cold water and peel the skins.
  2. Peel the cucumber in stripes and slice into 1 cm rounds. Dice the yellow bell pepper.
  3. Place the cucumber and bell pepper in a microwave-safe bowl, cover with plastic wrap, and microwave (600W) for about 50 seconds.
  4. While the vegetables are still warm, combine with the peeled tomatoes and pour over the Kewpie Italian Dressing. Let marinate to blend the flavors.

Tips

  • For enhanced flavor, chill the marinated vegetables in the refrigerator before serving.
